Broccoli Salad
Prepartion 15 minutes if Savory Cashew Cream is made, 1:15 including waiting time for soaking cashews for cream (if you are pressed for time you can use a Vegan Mayonnaise such as"Nayonnaise"

Salad
- 2 bunches of Broccoli, stems peeled and cut into small pieces, florets cut into small bunches.
- 2 medium Carrots, grated
- 1 Cup Raisins or dried Black Currants
- 1 Green Onion, cut thinly crosswise
- 1 Cup Savory Cashew Cream
- 2 tsp Curry Powder
- 2 Tbsp Braggs Amino Acids
- 1/2 Cup Almonds, roughly chopped
Preparation
- In Large Bowl, Combine Cashew Cream, Curry Powder and Bragg's Amino Acids. Whisk until Blended.
- Add Broccoli, Carrots, Raisins and Green Onions and mix until well coated
- Just before serving, Sprinkle with Almonds
Cashew Cream
- 1 Cup Cashews
- 1 Cup Filtered Water
- 1 Tbsp Raw Honey o Agave Nectar
- 1 Tbsp Apple Cider Vinegar
- pn Sea Salt
- Water to adjust consistency
Preparation
- Soak Cashews in Water for 1 hour or more (We usually do this overnight).
- Rinse and transfer to blender or food processor. Add Honey, Apple Cider Vinegar, and Sea Salt. Blend until creamy. Adjust incrementally with water until mixture is the consistency of mayonnaise
