Edamame Hummus
Preparation Time 10 minutes
Difficulty Easy
- 2 Cups shelled Edamame (non GMO). If frozen, defrost before using.
- 1/4 Cup Light Sesame Oil (dark is too intense and bitter) Spectrum produces a cold expeller press one that is terrific)
- 1 Clove Garlic
- 2 Green Onions
- 1 Tbsp Soy Sauce
- 2 Tbsp Tahini
- Water to adjust consistency
- Extra Soy Sauce or Sea Salt to taste
- Optional--Black Sesame Seeds and thinly sliced Green Onion to garnish
Preparation
- Place first 6 ingredients in food process or a high speed blender (Vitamix).
- Process until smooth and creamy. If too thick, adjust incrementally with water. Season with extra Soy Sauce or Salt to taste
