Edamame Hummus

Preparation Time 10 minutes

Difficulty Easy

  • 2 Cups shelled Edamame (non GMO). If frozen, defrost before using.
  • 1/4 Cup Light Sesame Oil (dark is too intense and bitter) Spectrum produces a cold expeller press one that is terrific)
  • 1 Clove Garlic
  • 2 Green Onions
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Tahini
  • Water to adjust consistency
  • Extra Soy Sauce or Sea Salt to taste
  • Optional--Black Sesame Seeds and thinly sliced Green Onion to garnish

Preparation

  • Place first 6 ingredients in food process or a high speed blender (Vitamix).
  • Process until smooth and creamy. If too thick, adjust incrementally with water. Season with extra Soy Sauce or Salt to taste
Use as a spread on anything, or serve with rice crackers and sliced cucumbers!
