Faux Pho
Faux Pho
This dish was inspired by the classic Vietamese soup.
Fresh herbs are not only a wonderful source of flavor, but of vitamins too! Freshly squeezed limes add a tangy zing and well as a punch of Vitamin C. Red jalapenos are just green ones which are ripe and give the soup a pretty color. Sweet potatoes are not traditional (hence the “faux” part of “pho”) but we love ‘em and am always looking for creative ways to pack in nutrients! When purchasing chicken, always buy naturally raised, organically fed, free range birds.
Ingredients
- 2 Qt Chicken or Vegetable Stock
- 1 medium yellow onion, cut thinly
- ¼ C Fish Sauce
- 2 T Siracha Sauce
- 1 T Five spice powder
- ¼ Cup grated sweet potato
- 16 oz Chicken thighs, cut thinly crosswise
- 1 (8 oz) package Rice Stick Noodles
- ½ C Cilantro leaves, roughly chopped
- ½ C Basil leaves, roughly chopped
- ½ C Mint leaves, roughly chopped
- 2 Jalapeno (preferable red and ripe) cut crosswise very thinly
- 2 cup bean sprouts
- 2 Limes, cut into 8 pieces
Method
Combine Stock and onion.Bring to Boil. Add Fish Sauce, Siracha Sauce, Five Spice Powder and Sweet Potato. Turn to low heat and add Chicken and Rice noodles. Cook for 1-1:30 minutes and turn off heat. Transfer to 4 bowls. Garnish with Cilantro, Basil, Mint, Jalapenos, Bean Sprouts, and a Squeeze or two of Lime, and more Siracha if you like!
