Ingredients
- 12 Roma tomatoes
- 1 tablespoon Extra Virgin Olive Oil
- 1 tablespoon Fresh Epazote or Oregano Chopped
- 2 tablespoons Italian Parsley Chopped
- 2 tablespoons Freshly squeezed lemon joce
- 2 Green onion Thinly sliced
- 8 ounce Lump crab meat
- 1/2 teaspoon Salt (or to taste)
Directions
- Heat large pan over high heat. Place tomatoes in pan and blacken skin all over. Remove from pan and cool for at least 20 minutes (you can prepare the night before and finish the next day).
- Transfer to food processor or blender and pulse until slightly chunky.
- Transfer tomato mixture to bowl and add remaining ingredients.
Note: You can also char the tomatoes on the grill
