This is a great winter-spring vinaigrette you can enjoy when citrus is abundant and at its peak! The garlic and mustard emulsify the dressing. You can serve this with just about any green salad. It also makes a great marinade.

Ingredients
- 1 cup Extra Virgin Olive Oil
- 1/3 cup Orange Juice (2 fresh oranges)
- 1 tablespoon Orange zest
- 1/3 cup Apple Cider Vinegar
- 1 clove Garlic Finely chopped or pressed
- 1/4 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 teaspoon Prepared mustard
Directions
Whisk together all ingredients or combine in blender. Dressing will keep for a month refrigerated.
